Here is the status of the bug, now on both retina Mac AND retina Windows computers:
(ONLY on computers with very high native resolution)
1. Download and install Stellarium 0.18 or 0.90 beta (same behavior on each).
2. Run Stellarium, change to fisheye 180 (works fine).
3. Select "Configuration\Tools\Spheric Mirror distortion" . Changes properly to mirror view.
4. Select "Configuration\Main\Save settings\
5. Quit
6. Reopen stellariium.
7. Warped window now appears very small in lower left corner, with fisheye view a little larger.

I tried to restart Stellarium while being attached to the 1920x1080 projector but that didn’t help.
I set the size in Stellarium to 1920x1080 but that didn’t help
I changed the screen resolution from 1920x1200 to 1920x1080. That REALLY screwed it up. Now the cursor on Stellarium doesn’t select the correct item (it selects to the left and up from where the cursor is placed). Ghastly!
I tried throwing away my old config file - didn’t help

Here is the equivalent image from my 2018 Macbook Pro (same as my 2015 macbook pro) - similar to the Dell problem but even smaller on the screen.
The only workaround is to either only use a 1920x1080 laptop (a royal pain)
OR
after every session, turn off mirror distortion, save setting, THEN turn off. then the next time we start up stellarium we have to turn the mirror distortion back on.
I *HATE* to do this when folks are in my dome.
So, sorry to be the bearer of bad tidings but it is now worse, infecting my Dell 4K machine as well as my Mac.
The problem clearly is handling the output on screens with larger pixels sizes than the attached projector.
