Tomcat 8.0.x is slated for EOL in June, and Debian's tomcat8 package has already been on Tomcat 8.5.x for a while (it's in both their stable release (stretch) and in backports for the previous stable release (jessie-backports)).

It seems like Ubuntu should be keeping up here and be including Tomcat 8.5.x in the upcoming release.
