The note genuinely does seem to confuse people installing Ubuntu servers who aren't very familiar with Ubuntu.
I've done some work on tasksel so that we can do the following:
* hide ubuntustudio-desktop
* continue to always install ubuntustudio-desktop on Ubuntu Studio CDs
* install ubuntustudio-desktop automatically if any of the other Studio tasks are selected
Here's the seed change to take advantage of this:
