if by processes you mean entries in the system monitor, the answer is yes
but it also happens with only one format, it creates an okular process for
each document being viewed.
The difference is that when having .dvi documents it creates another okular
icon on the unity dash. Another thing I noticed is that if I have more than
one dvi file they get grouped just fine, so that I can have a couple of
pdfs and a couple of dvis in two groups (two icons).
