This is still a problem in 10.04. I have kernel packages held back in aptitude and Update Manager attempts to upgrade them every time it runs, resulting in me having to click about 8 checkboxes. Worse, since there are dependencies, not clicking in the right order can cause Update Manager to re-check some of the checkboxes I've unchecked.
