I remounted / so that it becomes writeable ('sudo mount -o remount,rw /') and then copied my programs/scripts to e.g. /opt and ran them there. Note: / does not have much free space left on my device (~350MB). I'm not sure why it works and if this is the proper way of doing this (I don't think so: There has to be a reason why 'phablet-config writable-image' disables over-the-air-updates).
