I've been able to determine a temporary solution that may be able to help.
Using:
sudo cp /usr/share/applications/[applicationName].desktop ~/.local/share/applications/
where [applicationName] = generic name of application with problem
will fix the issue temporarily. I am about to restart and attempt to recreate the issue. However, it seems that so far it has been fixed. Please see screenshot.
