I confirm that
apt-get install fonts-cantarell
mitigates the problem.
The texts, popups and tooltips are now fine, although a couple of icons are still funny (accessibility and bluetooth -- the mouse-over effect fixes them though).

Using fglrx driver on ubuntu 11.10, Radeon HD 3600.
