I cannot switch server from within package-kit, this has to be done in software sources in gcc.

I'm afraid not, with that I have to switch server (source) in every item listed.
I have attached a screenshot of the software-sources, you can compare it to gpk-prefs, software-sources has more options to easily customize your repo's, as example switching from the Danish to the main server as I have done.

Hmm, this might have a good use-case. I am not the one who makes these design-decisions, but I can ask the one who is in charge. ;-)
This option has a chance to be included, I think.
