Bug Description
1) I am using Ubuntu 22.04.3 Jammy Jellyfish.
2) This happened in both Libreoffice write that came withe Ubuntu and also with the version 7.3 that I installed the second time.
3) I expected to there to '1' at the bottom of page 1, '2' at the bottom of page 2 and so on.
4) instead of the numerical page number there was the text 'page number' at the cursor position of each footer field. If you double clicked and entered '1'at the bottom of the first page , there was '1' at the bottom of all pages.
I add 'footer field', select position of footer, then 'insert page number'. Instead of entering '1' at the bottom of first page and '2' at the bottom of second page it enters the text 'page number' in a grey text box at the bottom of every page. If you double click on that box and enter '1', it enters '1' at the bottom of every page.
It used to work in previous versions, I am returning to Linux and libreoffice after many years. Works in Safe mode but not in non safe mode. The extra steps are a hassle.
I deleted and re installed libreoffice writer again, same result.

I can't reproduce this Page numbering issue with LibreOffice 7.5.5 from Jammy Backports, see attached screenshot.
Please install LibreOffice 7.5.5 from Jammy Backports and test if issue still exists in 7.5.5
