The installation seems to me proceeding fine and then crashes when installing GRUB.
Partitions have been created manually outside the installer.

Perhaps this is related: the DPKG database is corrupt, perhaps due to something that happens before the crash. dpkg/info/ adwaita- icon-theme. list (which is a binary file, not text) allows dpkg to work again.
Mounting the root filesystem in /target and attempting any package operations fails consistently.
