For now, rather than adjusting apparmor-easyprof-ubuntu, please use this in the security manifest:
    "read_path": [
      "@{HOME}/.local/share/evolution/addressbook/system/photos/"
    ]

We'll want to keep track of these and I'll review them as part of my work item for apparmor gaps.

This is not a High priority bug. A workaround is in place for the affected app and nothing else needs it. The bug has been left open to examine future occurrences.
