This is a bug in the ultimate- edition- themes package not gnome-colors. If Ultimate Edition is going to add their own repository over the Ubuntu or Debian repositories, they should take care to not make packages that conflict with official Debian/Ubuntu packages. Please open a bug against the ultimate- edition- themes package where ever Ultimate Edition tracks their bugs.
They should probably just depend on gnome-human- icon-theme instead of supplying their own version. If they make there own local changes they should either have ultimate- edition- themes declare a Conflicts/Replaces on gnome-human- icon-theme or install it to a different location.
