Bug Description

In my music libary on banshee I have a number of different formats including ogg and flac files, these files appear on the list of music to be streamed but do not play on itunes. It would be nice to have the option to transcode these files on the fly to mp3 format for itunes or don't have them on the list if you're using itunes.

I'm not sure if this is possible with DAAP or not, but I'll look into it at some point. It's not a high priority for me right now, but if you care to look into it please feel free.

I don't think its Tangerine's job to perform transcoding.

iTunes can play ogg and flac files if the correct quicktime components are installed

it can yes however not over DAAP trust me I have tried that

Do DAAP clients send any "Accept" HTTP headers that would let you do content type negotiation?

This is completely possible and is done by Firefly (mt-daap).
