Bug Description
The method of assigning a specific name to an interface is something that has changed over the years in Ubuntu. I think the current approach is to create udev rules that match the mac address. It would be useful to be able to set a name for a device in subiquity, and have that persist for the install process and of course to the install.

On the implementation side, subiquity generates netplan which supports interface renaming, so subiquity doesn't need to sweat the details. Most of the work will be making the UI nice.
