Fonts are poorly rendered in Wayland session

Bug Description

Using Ubuntu through a GNOME Wayland session, upgraded from Eoan a long time ago.

Does not happen using X11. Default level depends on the fonts used, but there is something definitely odd in rendering. Here I attached Roboto Regular 11.

This seems to be related to gsettings default values. On a freshly installed Groovy system using wayland, the snap-store is not properly themed. The window title bar appears to be using theme settings from bionic.

If I open gnome-control-center and select the appearance panel it immediately applies the proper theme. Something is triggering the theme setting to be updated there. It looks significantly better after themed properly.

I've also confirmed this is not limited to snap-store. I've reproduced it with gnome-calculator and gnome-sudoku on a wayland session.

I have very poor font rendering with current stable:

I also have a problem with fonts in snap-store only in Wayland. Fonts in other applications are fine.

Could this be the very same problem as https://github.com/ubuntu/libreoffice/issues/11, which got solved by https://github.com/ubuntu/libreoffice/pull/12?
