I tested this by embedding the Jabber options widget inside a very simple test application, and the same white text is shown there. It is therefore not the fault of the UOA panel (it could have been an overridden theme colour). It seems to be a bug in the Jabber plugin provided by Empathy.

I spent a lot of time investigating this and I'm pretty sure that's a GTK+ bug. If you focus out and then focus in the window, the labels are displayed!

By any chance, do you have an in-house Gtk+ expert that could take a look on this really weird bug?

Added Andrea Cimitan, who said to ping him if I have any theming problems.

@Cimi: You can get to the problematic bit of UI as follows:
1. add a Jabber account from the Online Accounts panel
2. in the account details for the new account, click the ‘Edit options’ button
3. click the ‘Advanced’ expander, the text labels are white on a grey background
4. focus out and then focus back in, the text labels are as normal

Seems to be a bug in the app, I can reproduce with adwaita as well. try disabling all the colorizations you do in the app and see if you can reproduce it
