dkimsign: add argument to specify headers

Bug Description

https://manpages.ubuntu.com/manpages/focal/en/man1/dkimsign.1.html does not allow the specify which headers shall be included in the signature.

It would be great to have this extension of this great tool.

e.g. to have

   h=from:to:subject:message-id:received;

dkimsign is meant to be simple, so I'm not sure if this ends up being too much to add to it or not, but if someone wants to provide a proposed change to support this, in a way that doesn't affect current users, I think it's probably OK. I'm unlikely to implement it myself though.

The library supports include_headers. So for the cli it is "just" a new keyword option defaulting to None (thus selecting the default in the library).
