I am new to labels, but was wondering if there is a way to highlight a
labeled message in the summary buffer? u-vm-color mentions something,
but I wasn't able to make this work. I didn't see a relevant face in
the vm list of faces...

Yes, please see vm-summary-faces-alist. It may not be entirely
straightforward to set it up, but it should be possible to highlight
whatever you want in the Summary window.
